Corn Tortilla Soup
We regularly send this mix to customers in Texas from Minnesota. That’s how good the soup is.
Simmer the package ingredients with 4 cups water and two cups of tomatoes for 15 minutes. I use my home canned tomatoes but a 15 oz can of crushed or diced tomatoes or tomato sauce will work just as well. Crumble a handful of plain tortilla chips in each mug or bowl. Ladle soup over the chips, garnish with shredded cheese and serve.
Ready in 15 minutes.
You will need: 14 oz can crused or diced tomatoes and 2 1/2 cup broken tortilla chips.
Serving Suggestion: Garnish with shredded cheese.
